Family recipes to make your bonfire night go with a bang!
Bonfire night is upon us again. Make it go with a bang with these great festive family recipes.
Loaded jackets
This is a great alternative to the traditional jacket potato. Reduce the ‘at the table fuss’ by serving with the toppings already added.
Ingredients
Potatoes (russet is a good variety for baking) Cheese Bacon Seasoning Spring onion Sour cream
Instructions
Bake the jacket potatoes as usual
Whilst the potatoes are baking, grill the bacon
Once potatoes are cooked allow to cool for 10 mins
Cut in half and scoop out, leaving 2.5cm of potato on the skin. Set aside the potato
Increase the temperature on the oven and bake the skins for 10 minutes, then turn over and cook for another 10 minutes
Add the cheese, cooked bacon and seasoning to the cooked potato and mix together
Fill the skins with the mixture and return to the oven to melt the cheese and warm through
Top with the sour cream and spring onions and serve
Don’t hold back, add as many fillings as you like to keep the whole family happy.
Catherine Wheel toad in the hole
Ingredients
120 g plain flour 3 large eggs 12 linked chipolatas (or 1 long cumberland sausage) 2 tbsp oil
Instructions
Mix flour, eggs and milk together with ½ tsp salt and set aside for at least half an hour
Heat oven to 220C
If using chipolatas, untwist the links and squeeze the meat to make one long sausage
Coil in an oven proof frying pan or skillet and pour over the oil
Put in the oven to brown for 15-20 minutes, after this time, carefully remove the sausage from the pan, pour in the batter mixture and put the sausage on top
Return to the oven for 30 minutes
Yum! Just add your fave veggies and gravy and you’ve got a delicious bonfire night meal!
Toffee apples
A sweet treat with a healthy centre!
Ingredients
6 granny smith apples 300 g demerara sugar 3 tbsp golden syrup 75 ml water 25 g salted butter 1 ½ tsp cider vinegar Lolly sticks / skewers
Instructions
Clean apples and insert stick/skewers
Put a pan on the hob with the water, sugar, golden syrup and butter
Gently dissolve ingredients then add the vinegar and stir through
Increase the heat. Once it reaches 140C it will have reached the toffee stage
Dip the apples in the toffee and leave to set on a board/surface lined with baking paper
Add chopped nuts or sprinkles if you want to add even more pizazz!
